Hi ladies. Does anyone have a great appetizer recipe that includes shrimp? I am hosting a girls night out next thurs and really want to be able to make an appetizer with shrimp. Any ideas?

Well how about a shrimp dip? it is a cream cheese based one. Or bacon wrapped shrimp? They are shrimp wrapped with bacon and then baked. If you are interested in either let me know. :)

Liane- these are always a hit:

Mini Cheese and Shrimp Quiches

1 package refrigerated butterflake dinner rolls (12 rolls)

1 (4 ounce) can shrimp

1 1/3 ounces gruyere cheese

1 egg, beaten

1/2 cup light cream

1 tablespoon brandy

1/2 teaspoon salt

Dash pepper

Grease 1 3/4-inch mini muffin pan.

Separate each dinner roll and press into muffin pans. Place 1 shrimp into shell. Combine egg, cream, brandy, salt and pepper. Divide cream mixture into shells (2 teaspoons each).

Bake in a 375 degree F oven for 20 minutes.

Can be frozen and reheated.

Or this one is good too

Shrimp Spread

1 – 8 ounce package of cream cheese, softened

1 – 8 ounce jar of cocktail sauce (try both spicy and mild)

1 – 2.25 ounce can of sliced black olives, drained

1/2 pound cooked bay shrimp

3 green onions, chopped

Crackers for serving

Spread cream cheese on a medium round serving platter. Spread the cocktail sauce on top of the cream cheese. Top with baby shrimp, green onions and olives. Chill in the refrigerator at least 30 minutes before serving. Serve with crackers.

Ohh I have a great recipe for a shrimp ball... I'll get the recipe tomorrow from my mom... it's great! Basically it's canned baby shrimp mixed with cream cheese and I dont know what else. And then you roll it into this big ball and cover it with cocktail sauce and serve it with crackers... Talk about good! I'm making mysef hungry!

mmm coconut shrimp sounds SOOOO Good Maria I like it with either mango salsa or the pina colada sauce YUM. It's not hard to make either.

I also like tequila lime shrimp grilled on scewers, i make it with avogado cream dipping sauce. I can send you the recipe if you want. Have fun entertaining! :)

They all sound so amazing!!! Fran and Maria, that shrimp ball one sounds interesting and so delicious!!! I was hoping to be able to eat crackers with it so maybe that would work!! I might have to make that and Caryns and Oblivs....yum!

i always buy these little vup things that are like pastries and fill them with stuff - they are always the 1st thing gone. Last time i put little spicey chopped up weenies in there with motz cheese on top then baked em for about 15 min til cheese was melted at 350.

You could mix up shrimp and cheese and plop it in the shell and bake em... mmmm....

That sounds extremely delicious Chels!!!! We each take our turn hosting a girls night and the host has to make a supper theme...mine is appetizer night. We just get together have some drinks, play games, have fun. No men or children allowed unless you have a baby on the boob or a newborn, etc. Usually 2X per year we go out somewhere nice. We go out for a nice meal and go do something fun afterwards. We arent big party girls but we love having fun!! We are having one of the yearly "get out" suppers the first weekend in October so that we could have it before the twins come!

Getting together with 5 of my friends next Sat. It's a sleepover and you're making me so excited!!! Haven't done a sleep over in a lot of years with so many of us. It was a requirement this time, the host doesn't want us to have to worry about drinking and then driving. Dinner and drinks, and movies and drinks, games. You get the picture!!

I've done the shrimp ball with the cream cheese. I don't use the little shrimp only because I always have cocktail shrimp in the freezer. I just cut those into like 3 pieces instead. Got that recipe if you need. Sounds like Kellers got it covered though. I make a killer cocktail sauce (so easy, ketchup, hot horseradish, worcestershire, black pepper, lemon juice, garlic powder, dash hot sauce) YUM!!

Have fun. I can't wait til mine next weekend.

Shrimp Ceviche'

- Bag of deveined large/medium shrimp from Costco

or Sams (cheaper)

- Precook some Tilapia (optional) (with herbs)

- Scallops (optional)

- Diced Onions

- Diced Tomatoes

- Diced Cucumbers

- Diced Cilantro

- Diced Avocado

- Diced Radishes (optional)

- Salsa (can be pre-made, or just buy Pace

Picante Medium Hot)

Combine all ingredients in bowl, add lots of lime juice, like 7-8 limes, salsa, salt and pepper. Let fish/shrimp and ingredients marinate for a couple of hours in the fridge and serve cold.
